Break into florets and serve with broccoli, white cauliflower, carrot sticks, celery and crisps with a great aeoli or mayonnaise for the perfect summer crunchy pre-dinner snack. Add baby corn, asparagus and cold meat with crusty bread for a delightfully refreshing lunch. Or briefly boil or steam, and serve hot as a side with a white or cheese sauce. Although it loses some of its vibrant colouring int he cooking process, this is an extremely useful vegetable!
