For making Asian green papaya salad: 1 very green papaya julienned, 6 green beans blanched and sliced lengthwise, OR 4 carrots julienned mix together. Make a dressing with 1 garlic clove grated, 1 red chillie finely sliced, pinch of salt, 3T (45ml) fish sauce, 1 heaped T (20ml) brown sugar, juice of 2 limes OR 2 T rice wine vinegar, toss together. Add 3T (45ml) roasted chopped peanuts, 1T chopped mint, 1/4 cup chopped corianer optional. Great side dish but also a great standalone meal.
The best papaya is a ripe one. Check by gently pressing the outside. If there is no give, it is not ripe yet and will not taste good. Unless you want a properly green one for an Asian salad – different item!
