Free range: Duck quarters


Organic duck free to forage and hunt own protein. Quarters are the thighs with drumsticks, skin on and bone in, 4 per packet. Salt well. You can lightly oil the skin to ensure that the salt has purchase on it. Set skin-down in a cold pan, no oil (Gordon Ramsey says) to allow the oil to slowly render as the pan warms up to high heat. When the skin is crispy turn the meat over, give it only another 4 minutes then take the pan off the heat and leave covered, to rest. Duck is best consumed a little underdone.
