Per two. Order to have 1 per person. Organically grown, it is advisable to sprinkle heavily with salt and rinse under a running tap for in case of little insects. Trim stems to about 2cm. Simple recipe: Boil in well-salted water until leaves pull off easily. Make sure to clean the outer layer off the stems and pull the useless small leaves off. Then serve with lemon butter sauce, give each person their own bowl so that they can pull off leaves, dip into the sauce and strip bases off with the teeth. When close to the centre be sure to remove and discard the ‘choke’ and then immerse yourself in the delight of dipping the heart into your lemon butter sauce to eat, with the stem!
