Versatile vegetable especially good for soups and stews with winter evenings approaching. They can also be very thinly sliced on a mandoline, and slightly pickled in a sweet vinaigrette made with lemon juice not vinegar, for adding to a salad. Grated fresh also works but do not add vinegar, or a vinegar based salad dressing when using turnips. Cook and puree for a surprising twist as a side.
