Naturally fermented red cabbage made with the addition of salt only, and spring water, and allowed to ferment in this liquid. This is an excellent probiotic food that can be used as a side, or a pickle. The taste may be enhanced by the addition of spices and grated or chopped apple or rehydrated raisins.
