Open-crown lettuce varieties that have all their leaves open to the sun build up resilience to disease and sun damage, which is what gives them their nutritional value, and valuable anti-oxidants. For more substance we add to the mix the other green leaves and herbs to make up a delightful and great tasting salad. Sorrel is a wonderful, most underutilised leaf vegetable. Used sparingly it adds acidity to a mixed salad which is surprising as it is refreshing, and in soups and stews it adds a dimension which once gotten used to, is sorely missed when it is absent. In a lamb stew it easily takes the place of waterblommetjies for those who are deprived of waterblommetjies.

Not a true version of the original, my oriental veggies seem to have crossed with each other. Lg single or multiple loose leaves cut and packed with long stems to arrange an attractive platter, or sliced into salad. Delightful, can be eaten raw or cooked. This ‘new’ variety has large leaves which is lovely for plating up a cheese or meat platter with perfect flat round leaves, or throw them in with a mixed salad. If cooking utmost care is necessary to prevent them from disappearing. Finish the stirfry, turn off the stove and then put the Tah Tsai in, toss to mix and heat, serve.

This soft leafy plant originates from the Australian outback where it is known as warrigal greens. It is distinct from other ‘baby spinach’ in that the leaves are thicker and succulent, which renders it very suitable for eating raw in salads or making a green smoothie. It is indicated in the slowing down of macular degenerative disease. If cooking take care not to overcook, it may be sufficient to simply dunk the leaves in boiled water for a few seconds to wilt. My personal favourite: cook potatoes until mashable. Lightly cook baby NZ spinach until soft. Mash together, with a generous amount of butter, salt and cracked pepper. We call it green mash and it is truly delightful as a standalone dish or on the side.

A favourite prep: peel, cube, toss into open baking dish, drizzle with olive oil, sprinkle flaked sea salt and fresh herbs, add whole garlic cloves, add onions halved and separated, roast in medium hot oven until sweet and sticky, no sugar added. Butternut is also great for making thick wholesome soup, or just steam and serve with a simple butter sauce or melted butter and lemon juice. Grate your butternut nice and fresh, add sweet orange slices peeled, or just some orange juice, serve as a salad.

Fennel has a taste of liquorice when it is raw. Temper by slicing finely and ‘pickling’ in fresh orange juice for an hour, it makes a good salad or garnish on its own or mixed into a green salad. The bulb can also be used in every way as one uses onions, fried or the ‘scallops’ separated and added to a stew. It makes for a wonderful fake waterblommetjie stew, in the absence of the waterblommetjies. Just use stewing lamb, some onions and fennel and potatoes, salt and pepper and a good stock to cook the stew in. Add a little lemon juice just before serving. Sprinkle foliage in fine bits over salads esp. potato salad or fish. Can be frozen, will turn black but still taste good.
