Passata is just a fancy name for our delicious pasta sauce, made from roma tomatoes. We only use ripe tomatoes so that the colour is vibrant and the taste rounded and sweet. The tomatoes are roasted, pureed and seasoning added together with fresh Italian herbs only. No colourants, no stabilisers, no preservatives added. Use on pizza bases, in lasagne, over pasta, with eggs. Very versatile. Refrigerate after opening and use within a week of opening.

Great all-year round herb for flavouring stews and meat dishes. We supply whole freshly cut sticks with leaves on. Keep the stick in water for as long as the leaves remain green, and pick as required. When it starts losing condition, allow to dry and then store the leaves in an airtight jar. Excellent for flavouring meats, vegetable dishes and pickles. The sticks are useful for cutting shorter and making kebab sticks, which lend a lovely flavour to your kebab. If you keep your sticks long, it is also useful for toasting marshmallows over the coals. If the stick has dried out, soak in water for an hour or more before using to prevent your food going up in flame over the coals.

If cooking utmost care is necessary to prevent them from disappearing. Finish the stirfry, turn off the stove and then put the Tah Tsai in, toss to mix and heat, serve.

This soft leafy plant originates from the Australian outback where it is known as warrigal greens. It is distinct from other ‘baby spinach’ in that the leaves are thicker and succulent, which renders it very suitable for eating raw in salads or making a green smoothie. It is indicated in the slowing down of macular degenerative disease. If cooking take care not to overcook, it may be sufficient to simply dunk the leaves in boiled water for a few seconds to wilt. My personal favourite: cook potatoes until mashable. Lightly cook baby NZ spinach until soft. Mash together, with a generous amount of butter, salt and cracked pepper. We call it green mash and it is truly delightful as a standalone dish or on the side.

Fennel has a taste of liquorice when it is raw. Temper by slicing finely and ‘pickling’ in fresh orange juice for an hour, it makes a good salad or garnish on its own or mixed into a green salad. The bulb can also be used in every way as one uses onions, fried or the ‘scallops’ separated and added to a stew. It makes for a wonderful fake waterblommetjie stew, in the absence of the waterblommetjies. Just use stewing lamb, some onions and fennel and potatoes, salt and pepper and a good stock to cook the stew in. Add a little lemon juice just before serving. Sprinkle foliage in fine bits over salads esp. potato salad or fish. Can be frozen, will turn black but still taste good.

Made from malus junnanensis which I was fortunate to discover growing near Sudwala. The malus junnanensis is the forerunner of the modern-day apple, which all originated from China. The fruit is not attractive, merely interesting looking and frankish to the tastebuds. It was the size and shape of the fruit that reminded me of an apple and then I researched it, which caused me to wonder if one could make jelly from it.
The jelly is a rich red colour and the pectin of such high quality the jelly can be perfectly sliced.
Serve with buttered toast, add to your platter of strong cheese, or spoon a generous dab onto cooked or roast pork when plating.
